With family and friends dropping in this time of year, it’s helpful to have a simple recipe you can make quickly and with pantry ingredients. Green Olive Tapenade fits the bill. You can switch up the ingredients based on which olives you have at home, adding in different herbs depending on the season. It’s a versatile spread for crackers, stuffing fish or stirring into warm pasta.

Sometimes it’s the simple things that we enjoy the most.

Ingredients:

2 cups Olinda California Queen Olives

4 garlic cloves, minced

1 tablespoon capers

2 tablespoons fresh parsley, chopped

2 teaspoon dried thyme

1 tablespoon lemon juice

Olinda Extra Virgin Olive Oil, as needed

Method:

  1. Place all the ingredients except the olive oil into the food processor. Pulse to break up the olives.

  2. Add the olive oil, 1 tablespoon at a time while pulsing, until you reach your desired consistency.

  3. Serve with crackers, toast points or stir into hot pasta.
