A few months ago, we posted an idea for Olive Oil Marinated Goat Cheese. It’s an easy way to upgrade your cheese board using inexpensive goat cheese and ingredients already in stock. Chef Scott Phillips, one of our customers, mentioned that he had success doing a similar prep using Feta.

Chef Phillips suggested we marinate the feta in our extra virgin olive oil combined with marjoram, garlic, chives, mustard seeds, Fresno peppers and blood orange zest. We tried it and loved it. Slightly spicy, salty and herbal – it’s the perfect combination of flavors.Thank you Chef Phillips for the delicious idea!

Ingredients:

Olinda Extra Virgin Olive Oil

8 ounces feta cheese, cut into 1 inch pieces

1 blood orange, zested

1 tablespoon fresh chives, minced

1 tablespoon mustard seeds

2 garlic cloves, sliced

1 fresno chili pepper, sliced thinly

2 tablespoons fresh marjoram, minced

Method:

  1. Combine 1/2 cup olive oil with all the ingredients except the feta.

  2. Place the feta in a bowl or jar. Pour over the olive oil mixture. Add more oil until the feta is completely covered.

  3. Marinated overnight and serve with crusty bread or crackers.

  4. Reserve the leftover oil for another use.
